Cabernet Sauvingnon: 50% Finca s’Aujub Vermell

Syrah: 50% Finca s’Aujub Vermell

Harvest: Manually in 15 kgs boxes. First week September (Syrah), and third week of September (C-S). Production 1,5 kgs/grape vine.

Elaboration: Pre-fermentative cold maceration (48h – 10 ºC). Fermentación in small stainless steel tanks (1,000L.) at a controlled temperature (25 ºC) and ageing in new barrels (100% French oak) the different varieties separately during 14 months. Subsequent coupage based on the selection of the best barrels.

  • Acidity Total: 6,3 g/L
  • Sugar: < 3 g/L
  • Cork: Natural 49mm
  • Bottle: Bacco 75 cl.
  • Annual Production: 1,500 bot.

Tasting Notes

  • Colour: Cherry red.
  • Aroma: Intense aroma of black and red fruits. Mineral and balsamic notes in perfect balance with roasted.
  • Palate: Starts out soft on the palate, going into a well-balanced, persistent finish with ripe tannins of great quality.
  • Gastronomy: Serve between 16 – 18 ºC.
  • Red meat, game, cheeses.
